Many have said that if you wish to hide a structure from the tax authorities / codes enforcement, you "can't" because of satellite imagery, drones, and so on.
But I'm convinced it's not that hard.
I have un unpermitted cabin on my uncle's land, and during a recent drone re-val it was not discovered. I've checked all satellite imagery I can get my hands on and you can't see the building.
It's in a thick hemlock forest, in an area with dense, shaded ridges and a ton of forest cover. It's also over a half-mile from the road, with a walking-only trail in. So with no driveway, they're not looking for it.
Cedar forest would be even better. Combine with a green roof to throw off IR-heat imagery (which is overkill to plan for IMO), and a masonry heater with a smoke reburner so that exhaust from the stove comes out room-temp or colder... you'd be golden.
But you'd have to either be living without a car, or building camouflaged parking by the road. The absence of any aerially visible driveway is key.
